Seed potatoes were placed in egg cartons on a window ledgeand allowed to sprout.
Purple potatoes were chosen because have good amounts of potassium and vitamin C, as well as various B vitamins. Purple potatoes contain more than 4 times the antioxidants as regular potatoes, due to the concentration of anthocyanins. Anthocyanins are antioxidant compounds which improved eye and heart health, as well as a lower risk of chronic diseaseand cancer. Anthocyanins are the pigments that impart the attractive purple colour in the potatoes.
A layer of compost was laid at the bottom of a potato bag and the seed potatoes were planted on top.
The potato plant was allowed to grow and produced flowers which were pinched out to stop the plant using excess energy to produce seeds.
The potatoes were harvested when the plant leaves die down
